Seolleongtang is a traditional Korean soup made by simmering ox bones, typically leg bones, for several hours until the broth becomes rich, creamy, and milky white in color. This long cooking process extracts nutrients and flavors from the bones, resulting in a nourishing and comforting dish.
The soup is usually served with slices of tender beef, rice, and thin wheat noodles called somyeon. Diners typically season their individual bowls with salt, pepper, and chopped green onions to taste.
